Ingredients
Makes approx. 750 g
250 g rolled oats (optional: gluten free oats)
100 g quinoa flakes
40 g pumpkin seeds
30 g sunflower seeds
2 tbsp chia seeds
2 tbsp ground flaxseed
60 g pecans
60 g hazelnuts (roughly chopped)
50 g almonds (roughly chopped)
30 g coconut flakes
6 tbsp runny honey
4 tbsp coconut oil
Finely grated zest of 1 orange or lemon
2 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
100 g dried cranberries or goji berries
Feel free to swap nuts and seeds according to taste or dietary needs
Method
Preheat the oven to 170°C. Line two baking trays with baking paper or use one large ceramic dish.
In a small saucepan, gently heat the coconut oil and honey over low heat until fully melted and combined. Stir in the orange or lemon zest and set aside.
In a large bowl combine the dry ingredients: add the oats, quinoa flakes, pumpkin seeds, sunflower seeds, chia seeds, flaxseeds, pecans, hazelnuts and almonds.
Pour the warm honey–coconut mixture over the dry ingredients and mix well until everything is lightly coated.
Spread the mixture evenly across the trays and bake for 20–30 minutes, turning the granola once halfway through. At this point, sprinkle over the coconut flakes, stir again and return to the oven. You’re aiming for an even, light golden colour -don’t let it go too dark.
Once baked, remove from the oven and allow the granola to cool completely. When it’s cold, mix in the cinnamon, mixed spice, goji berries and cranberries.
Transfer to an airtight jar or container. It will keep well for up to a month. Serve with Greek yogurt and fresh berries, or enjoy with almond milk for a festive breakfast.
