Christmas Cinnamon Cookies

These Christmas Cinnamon Cookies are one of those bakes that fill the whole house with warmth. They’re simple to make, naturally fragrant and a lovely way to bring children into the kitchen during the festive season. The star ingredient of this recipe is cinnamon and specifically Ceylon cinnamon, the variety we prefer in nutritional therapy. Ceylon cinnamon has a gentler, sweeter flavour and contains significantly less coumarin than cassia cinnamon, making it kinder on the liver and more suitable for regular use in children and adults.

These cookies are soft in the middle, lightly crisp at the edges and perfect with a cup of tea or hot chocolate after a winter walk. They also make beautiful homemade gifts.
Ingredients
75 g oatmeal or rolled oats (can be gluten free)
150 g wholemeal flour (or gluten free flour mix)
1 tsp Ceylon ground cinnamon
150 g brown muscovado or coconut sugar
½ tsp baking soda
Pinch of sea salt
150 g butter
1 tbsp honey
Seeds of ½ vanilla pod
4 tbsp cold milk or plant milk
Instructions
Preheat the oven to 175°C and line two baking trays with parchment.
In a large bowl, mix the dry ingredients: combine the oats, wholemeal flour, Ceylon cinnamon, sugar, baking soda and salt.
Gently melt the butter with the honey and vanilla seeds. Pour over the dry ingredients, add the milk and stir until a soft dough forms.
Shape your cookies: roll the dough into walnut-sized balls and place on the trays, leaving space between them. Flatten each one slightly with damp fingers.
Bake for 12–13 minutes, until the edges turn golden.
Leave to cool on the trays - they firm up beautifully as they rest.
