Immunity-Boosting Chicken Broth
Ingredients (Serves 4)
4 pieces grass-fed chicken breasts
4 celery stalks, roughly chopped
2 red onion, quartered
12–24 garlic cloves, peeled
15 cm piece fresh ginger, peeled
12 black peppercorns
A handful of fresh thyme
A pinch of sea salt
Water, to cover
Method
Prepare the base - Place all ingredients in a large pot and cover with water.
Simmer - Bring to a gentle boil, then reduce the heat and simmer for about 40 minutes until the flavours meld and the broth becomes fragrant.
Shred the chicken - Remove the chicken, allow to cool slightly and shred into bite-sized pieces.
Finish & serve - Return the chicken to the broth and serve warm. Add noodles or rice if desired for a more filling meal.
