Beetroot brownies - a gut-friendly, fiber-rich chocolate treat

This beetroot brownie was born out of those moments, when you want to bake something simple, familiar and chocolatey, but with ingredients that support the body rather than work against it. It’s the kind of recipe that comes together easily, using everyday staples, yet once it’s out of the oven, it feels deeply satisfying.

The beetroot blends seamlessly into the batter, adding moisture, natural sweetness and depth. What remains is a rich, fudgy brownie that feels indulgent, comforting and surprisingly nourishing, one that both adults and children enjoy.

These beetroot brownies are a gentle reminder that supporting the gut microbiome and overall health doesn’t mean giving up pleasure. With fibre-rich vegetables, whole-food ingredients and warming spices, it offers quiet support for digestion, energy and immune balance, making it a beautiful addition to family life, especially during the colder months.

Ingredients (makes 10–12 servings)

  • 3–4 medium beetroots

  • 180 g oat flour

  • 50 g unsweetened cocoa powder

  • 1 tsp cinnamon

  • 1 tsp bicarbonate of soda

  • 1 tsp gingerbread spice mix

  • 200 g coconut milk

  • a pinch of salt

  • 1 tbsp stevia

Method:

  1. Roast the beetroot in the oven or cook it in a saucepan, then let it cool completely. Afterwards, place it in a blender with the stevia and coconut milk and blend until smooth.

  2. Pour the beetroot mixture into a large bowl. Place the dry ingredients in a sieve and sift them into the bowl, then mix everything thoroughly.

  3. Pour the mixture into a baking tin lined with baking paper (mine is 15 × 25 cm) and place it in a preheated oven at 175°C. Bake for approximately 50–55 minutes on the fan setting. As baking times may vary depending on oven strength, check it halfway through. It is ready when a toothpick inserted into the centre comes out clean.

  4. Once baked, transfer the brownies to a wire rack and allow them to cool completely before slicing. The edges and top will be firmer, while the inside will remain nicely sticky with a true brownie texture that melts in the mouth. Stored in the fridge, it will keep for several days.
